THE FIREPLACE SALAD
This salad was “created” one night at a friend’s house who had a fireplace. Had some potatoes, red peppers, mushrooms, orange and plenty of fire so, our dinner was ready in a few minutes
4 medium size potates washed and wrapped in baking paper and aluminium foil
2 red bell peppers
2 dry onions soaked in water for 10 nimutes
1 orange
3 mushrooms
For the dressing
Olive oil
Orange juice
Pinch of oregano
1 garlic clove smashed
Salt, Ground black pepper
– Bake vegetables and remove skin from peppers and onions
– Cut veggies in bites with your hand
– Mix all dressing ingredients together and pour over veggies
– Stir well and add more salt if needed
